2019년 세계 치즈 어워드 수상작으로, 아일랜드에서 생산되는 극소수 양젖 치즈 중 하나입니다. 자연스러운 크림색 골든 껍질을 가진 세미 하드 양젖 치즈로, 최소 12주 동안 숙성됩니다. 상아색 페이스트는 부드럽고 크리미하며, 종종 작은 구멍(아이)이 있고 약간 부서지기 쉬우며 숙성됨에 따라 더 단단해집니다. 저온 살균된 양젖으로 만들어져 입안에서 크리미하고 버터리하며 약간 달콤한 뒷맛이 납니다. 이 400g 조각은 친구들과 치즈 보드에 즐기기에 좋은 큰 덩어리입니다.

밀폐 용기에 보관할 경우, Velvet Cloud의 Rockfield 양젖 치즈는 최소 4개월의 유통기한을 가집니다. 하지만 너무 유혹적이어서 그렇게 오래 보관한 사람은 아직 만나보지 못했습니다.
